While travelling California, a good friend introduced me to the concept of hand roll bars. I was immediately drawn to their simplicity and health benefits—fresh, anti-inflammatory, nutrient-rich, and never cooked or fried. Inspired, I returned to Simon’s Town, South Africa to fish, prepare, and understand every part of the fish we want to bring to Berlin.
I plan to share this passion for freshness and authenticity, creating a lunch and dining experience that is both nourishing and uncompromisingly pure but easy to understand rather than an acquired taste.
